Pumpkin Protein Muffins

Serving : 4 Prepping Time: 20 minutes Cooking Time: 30 minutes

 


INGREDIENTS

  • 16 slices low calorie bread

  • 113 g sugar free syrup

  • 140 g swerve brown sugar

  • 60 g vanilla protein powder

  • 230 grams egg whites

  • 8 oz pumpkin purée

  • 5 g cinnamon

  • 7 g pumpkin pie spice seasoning

CREAM CHEESE FILLING:

  • 200 grams non-fat greek yogurt

  • 72 g lite cream cheese

  • 8 g sugar free cheesecake pudding mix

  • 30 g vanilla protein powder


DIRECTIONS:

  • Cube Bread, and set aside.

  • Grease 9 x 13 baking dish.

  • In a large bowl add your maple syrup, brown sugar, protein, egg whites, pumpkin purée, pumpkin spice seasoning, and cinnamon.

  • Mix well.

  • Mix in cubed bread with liquid mixture until bread is well coated.

  • Then make the Cream cheese filling: Mix, Greek yogurt, cream cheese in cheesecake, pudding, and protein in another bowl and mix well.

  • Place half of the bread mixture down in greased pan and spread cream cheese mixture over top. Then cover with remaining bread.

  • Bake at 375 for 30 minutes.
