Cottage Cheese Jalapeno Poppers


Serving: 6 Prepping Time: 5 minutes Cooking Time: 13 minutes

 

INGREDIENTS

  • 6 jalapeno peppers

  • 1/2 Cup cottage Cheese

  • 2 tablespoons cream cheese

  • 1/4 cup cheddar cheese shredded

  • 1/4 teaspoon garlic powder

  • 1/4 cup panko breadcrumbs, divided



DIRECTIONS:

  1. Preheat the oven to 425°F

  2. Cut jalapenos lengthwise and remove the seeds and ribs from each pepper.

  3. In a medium bowl, cottage cheese, cheddar, garlic powder, and 2 tablespoons of panko breadcrumbs. Stir until well combined.

  4. Fill jalapeno halves with cottage cheese filling. Sprinkle remaining panko breadcrumbs on top.

  5. Arrange the stuffed jalapenos in a single layer on a baking sheet lined with parchment paper. Bake for about 13-15 minutes until golden on top.
